Zucchini Bites

I love a healthy, crispy snack! The parmesan zucchini bites are super easy to make. Not high in calories like Twinkies (yes, I love those as a snack, but my body doesn’t).

Ingredients:

1-2 medium zucchini (sliced the way you want them…I do about 1/2″ rounds)

Olive oil

Garlic salt

Seasoned pepper

Parmesan cheese (shredded)

Instructions:

Preheat oven to 425 degrees

After slicing zucchini, place in bowl. Sprinkle olive oil on top, evenly coating each slice. Place zucchini on a baking sheet (I covered mine with foil) and spread out trying to keep them from being stacked on top of each other. Sprinkle garlic salt, seasoned pepper, and Parmesan cheese over the zucchini rounds. Lastly, place in the oven and cook for 15 minutes until the cheese is a golden brown.

Bam, you have a healthy snack to eat!

Bacon, Pickles, Low Carbs…Oh My!

Next time you want a quick snack, try these yummy bacon-wrapped pickles. I typically get the following ingredients:

Vlasic Farmer’s Dill Spears

Bacon

Lawry’s Seasoned Pepper & Salt.

Pre-heat your oven to 425 degrees, wrap each pickle spear with bacon, lightly sprinkle the seasonings over each pickle. Once you are done prepping pickles, put in the oven for 25 minutes. Take out, cool off for five minutes, and enjoy!
